Holiday Peanut Brittle – YUM!

Here’s one of my favorite quick and easy holiday recipes, this one is fun to do with the children (and grown-ups, too!) and makes a great gift:

Peanut Brittle makes a wonderful Christmas treat or holiday gift.  It is so easy to find fun containers, either old ones to re-use and recycle, or inexpensive new ones, for fun and easy gift packaging.

Holiday Peanut Brittle:
Cook Time: 15 minutes




Ingredients:
2 cups sugar
2 tablespoons butter
1 cup (or less) of peanuts, pecans or walnuts

Instructions:
This is so easy you will never buy peanut brittle again! Melt the sugar in a skillet on medium heat, stirring constantly (if the heat is too high, the sugar will end up with a little bit of a burned flavor). As it melts, the sugar will become more and more crumbly.  Keep stirring until all the “crumbles” are melted.  Once the sugar has completely melted, stir in the butter and your choice of nuts. While hot, pour onto a greased cookie pan, 8X12 or larger (one with a rim, not a sheet), allowing the mixture to spread out over the sheet. Let cool. Break into pieces.
